Recipe : Serves 4
Ingredients
2 250 g packs of Paradise Sunshine Sweet Cherry Tomatoes.
1 2 oz pack Chopped Fresh Paradise Scent Sweet Basil.
1 Fresh Baguette.
2 Tbsp finely minced red onion.
1 Clove of Garlic.
1 tsp dried oregano.
3 Tbsp extra virgin olive oil.
Salt & Pepper (to taste).
Directions
Dice the Paradise Sunshine Sweet Cherry Tomatoes in half if you like larger pieces or in quarters if you prefer smaller pieces. Place cut tomatoes into a medium size bowl.
Chop Paradise Scent Sweet Basil into small pieces.
Dice garlic into very small cubes.
Add the remainder of the ingredients (except for the baguette) to the bowl and set aside while you prepare the bread.
Preheat a grill pan.
Slice the bread on an angle about 1/2 to 3/4 inches thick. Cut about 8-10 slices. Drizzle with a little olive oil and grill until crispy golden / dark brown. Place bread on a serving platter and top with the Paradise Sunshine Sweet Cherry Tomato mixture and top with fresh basil (optional).
Serve with pasta, meat or chicken
