Recipe : Serves 4
Ingredients
2 250 g packs of Paradise Sunshine Sweet Cherry Tomatoes or Paradise Glow Sweet Grape Tomatoes cut in halves.
1 2 oz pack of Paradise Scent Sweet Basil roughly chopped.
6 medium Roma Tomatoes diced.
2 cups water.
3 Cloves of Garlic, sliced.
2 Tbsp of Extra Virgin Olive Oil.
3/4 pound of Spaghetti.
Salt and Pepper, to Taste.
Freshly Grated Parmesan or Romano Cheese to serve.
Directions
Fill a large pot with water and sprinkle in a generous amount of salt. Add the pasta and cook according to packages directions.
In a blender add the Roma tomatoes and water and blend to a puree
In a large skillet with high sides, add the garlic and oil and preheat it over medium heat. Allow the oil and garlic to heat up together and let it cook until the garlic becomes lightly golden.
Add the pureed tomatoes and season with salt and pepper, let the puree cook for about 20 minutes or until the puree becomes the consistency of a pasta sauce.
Add the halved Paradise Sunshine Sweet Cherry Tomatoes or Paradise Glow Sweet Grape Tomatoes and allow to simmer for 10 minutes on low heat
At this point, your pasta should be cooked, drain it well and add it back in the same pot.
Add the sauce to the spaghetti along with the basil and stir everything together to mix well.
Place it on a platter and grate some parmesan or Romano cheese over the top.
