Recipe : Serves 4
Ingredients
1 pint of Paradise Glow Sweet Grape Tomatoes.
15 sprigs of chives or green onion stalks.
200 grams of cream cheese.
8 basil leaves chopped finely (Note: can substitute basil leaves with fresh dill, cilantro or arugula).
Pinch of course chilli pepper.
Pinch of course black pepper.
Pinch of course salt.
Directions
Place the cream cheese, chopped basil leaves, chilli pepper, black pepper and salt in a bowl and combine well until smooth.
Cut each Paradise Glow Sweet Grape Tomato in four along their lengths from the blossom end, but only reaching ¾ of the way through the tomato.
Gently slightly open the cut end of the tomatoes .
Place the cream cheese mixture into a piping bag and use the piping bag to fill the opened cut end of the tomatoes until a small amount of cream cheese comes out of each tomato.
Gently puncture the stem end of the tomato with a wooden kabob stick and remove the stick.
Insert a chive or green onion leaf into the stem end of each tomato and place on a dish.
